One Thing, Done Obsessively

Beurre & Fold is a specialist, not a supermarket. We make laminated pastry and almost nothing else, because doing one thing properly takes everything we've got. Five years in, we're still tweaking the fold count and arguing about butter temperature at 5am.

Our dough takes three days: a slow mix, an overnight rest, and then hours of folding cold European butter into it, again and again, until there are twenty-seven paper-thin layers. Then it proofs, then it bakes, then — for about four hours — it's the best thing in Seattle. After that it's just a very good croissant. That's why we bake all morning and sell out by one.

Do you really sell out every day?

Most days, yes — often by early afternoon and sometimes within a couple of hours on weekends. We only make what we can laminate properly, and a croissant is best in its first few hours, so we'd rather sell out than sell something past its peak. Pre-ordering is the only way to be certain.

How do I pre-order?

Call or use our order form with your pastries, count, and pickup day — a day's notice covers most boxes, more for large or catering orders. We'll have it boxed and warm at your pickup time so you can skip the line entirely. It's the move every regular makes.

Why only croissants and laminated pastry?

Because doing one thing properly is a full-time obsession. Lamination is finicky, temperature-sensitive, and unforgiving, and we'd rather make the best croissant in Seattle than a mediocre everything. Focus is the whole strategy.

Do you cater events?

We do — breakfast spreads of assorted viennoiserie for launches, meetings, and celebrations, boxed fresh for your date with coffee if you'd like. Send your headcount and day and we'll build a spread that makes you the hero of the morning.

Do you have vegan or gluten-free options?

Laminated pastry is, sadly, all about butter and flour, so we don't currently make a vegan or gluten-free version we'd be proud of — and as a butter-and-flour shop we can't promise an allergen-free kitchen. We keep our lineup small and honest. Ask us what's on that day.

Where are you, and when should I come?

We're on Melrose Ave in Capitol Hill, an easy walk from the neighborhood, with street parking nearby. Come early — we open at 7 with the fullest case and the warmest pastry. Follow the smell of butter; it gives us away by half a block.
