Our Story

Trained in Paris, Baked in San Francisco

Maison Levain began with two years in a Parisian boulangerie and one stubborn idea — that a great croissant is worth doing properly, no matter how long it takes. Our founder brought that training home to Hayes Valley and never cut a corner since.

Everything here is made the classical French way. Our dough is laminated by hand over three days to build those hundreds of shattering layers. Our éclairs are piped, baked, and glazed to order. Our entremets are built in thin, precise layers. It is slower and fussier than it needs to be — and that is exactly the point.

Three Days for One Croissant

The unhurried route from flour to the flaky thing in your hand.

Mix & Rest

We mix a simple dough and let it rest overnight — the first of several long pauses that build real flavour.

Laminate by Hand

Over the next two days we fold in sheets of French butter, again and again, creating hundreds of delicate layers.

Shape & Proof

Each croissant is hand-rolled and left to proof slowly until it's pillowy and ready for the oven.

Bake Fresh

Into the oven they go, emerging golden, crackling, and honeycombed — out to the case while still warm.

Can I reserve pastries or order ahead?

Absolutely — it's the surest way to get what you want, since our viennoiserie and macarons sell out fast. Call or use our order-ahead and we'll set your order aside fresh for pickup. Same-day requests are welcome too, subject to what's left in the case.

How far ahead should I order a custom cake?

For custom entremets and celebration cakes we recommend two to three weeks, and more for weddings and large events. Simpler cakes can sometimes be arranged in a few days. The earlier you reach out, the more we can design for you.

Do you offer gluten-free or vegan options?

We bake a small rotating selection of vegan pastries and a few gluten-friendly items, though as a flour-and-butter patisserie we can't promise an allergen-free kitchen. Call ahead and we'll tell you exactly what's available that day.

Do you cater events or make gift boxes?

We do, and we love it — macaron towers, dessert tables, viennoiserie spreads, and beautiful gift boxes for any occasion. Share your date, headcount, and palette and we'll compose something lovely.

When is the best time to come?

Morning is best — we open at 7:30 with the fullest case, and the croissants are at their peak. Popular pastries can sell out by early afternoon, so early visits are rewarded. We do bake through the day, though, so there's usually something fresh.

Where are you, and where can I park?

We're on Hayes Street in Hayes Valley. There's metered street parking nearby and a garage a short walk away — and the smell of butter tends to guide people the last block. We can't wait to see you.
