A short menu is not a limitation. It's the whole point.

Four at a Time

Two espresso, two filter. Each one earned its place against thirty others on the cupping table, and each one leaves when it stops tasting its best.

Farm-Direct, Named

Every bag names the farm, the altitude, the varietal and what we paid. If we can't tell you where it came from, we don't buy it.

Recipes, Not Guesses

Every coffee has a dose, a yield and a time written on the bar. Your flat white tastes the same on a Tuesday as it did on Saturday.

Ask Or Don't

We'll happily talk about processing methods for ten minutes. We'll just as happily hand you a latte without a word. Neither is the wrong order.

No Flavoured Syrups

Not out of snobbery — we just haven't found one that doesn't bury the coffee we spent months sourcing. Oat, whole and half-and-half are all here.

Bring Your Cup

Seven Years on Telegraph

Ardent opened in a narrow shopfront in Temescal in 2019 with a second-hand lever machine and a menu of three coffees. The machine has been replaced. The short menu hasn't.

The idea then and now is that a coffee bar should be opinionated about what it serves and completely relaxed about how you order it. We will happily spend ten minutes on why a natural Ethiopian tastes like blueberries. We will just as happily hand you a large latte without comment. The failure mode of specialty coffee is making people feel stupid, and we work hard at not doing that.

We buy farm-direct where we can, publish what we paid, and rotate the bar when the season turns. Nothing stays on because it sells.

Four Things That Matter More Than Your Machine

In roughly this order. People spend money in exactly the reverse of it.

The Grinder, Not the Brewer

A cheap grinder wrecks good coffee more thoroughly than a cheap brewer ever will. If you're buying one thing, buy this one, and buy burrs rather than blades.

Weigh It

A $15 scale changes more than a $300 machine. Sixty grams of coffee per litre of water is a starting point you can then argue with.

Fresh, But Not Too Fresh

Coffee wants seven to twenty-one days off roast. Straight off the roaster it's still gassing and tastes flat and sharp at once.

Taste and Adjust One Thing

Sour means grind finer. Bitter means grind coarser. Change one variable, brew again, and you'll be somewhere good within three cups.

Because "ethically sourced" on a bag means nothing without a number beside it.

What We Paid

Every coffee on the bar has its farmgate price on the card. Last season we averaged 2.6× the Fairtrade floor. We publish it because a claim you can't check isn't a claim.

Who Grew It

Farm, producer name, altitude and varietal, on the bag and on the card. Where it's a co-operative we name the washing station rather than hiding behind a region.

When It Was Roasted

Roast date, not a best-before eighteen months out. If a bag is past three weeks on our retail shelf it comes off and goes to staff.

Good to Know

Before You Come In

Do you have wifi and can I work here?

There's wifi, and you're welcome for an hour or two at the back tables. We don't put a timer on anyone, but the window bar is for people passing through and we'd ask you not to set up a second office there on a Saturday.

Can I get a large one?

Yes. We don't do sixteen-ounce filter because it goes cold and thin, but every milk drink comes in a bigger size if you want it. Nobody here will suggest you shouldn't.

What if I don't like the coffee I ordered?

Tell us and we'll remake it as something else, no charge and no interrogation. Taste is taste. Our Kenyan splits the room and we'd genuinely rather you had the Colombian than a cup you didn't enjoy.

Do you do decaf?

Always, and it's a proper one — a Colombian sugarcane decaf that we buy on the same terms as everything else. It goes through the same espresso recipe rather than being an afterthought.

Is there food?

Pastries from a bakery four blocks away, delivered at six-thirty and gone by eleven most days. We don't do a kitchen, and we'd rather point you somewhere good than serve you a sandwich we're not proud of.

Can you grind beans for me?

Yes — tell us your brewer and we'll grind for it. If you've got a grinder at home, buy them whole; the difference over a week is bigger than most people expect.

What are the cupping sessions?

The first Saturday of each month, an hour, free, capped at ten people. You taste six coffees blind and say what you notice. No experience needed and no right answers — sign up at the bar.

Do you wholesale to other cafes?

Not currently. We roast a small amount for ourselves and would rather do that well than start a second business. We'll happily point you at two Oakland roasters who do it properly.
