One Perfect Bite, Repeated Four Hundred Times

A cocktail party lives or dies in the details nobody notices: the tray that reappears before anyone looks for it, the bite that doesn't need a napkin lecture, the bartender who remembers the second drink. Vesper & Lane was built by two catering directors who kept lists of everything that went wrong at other people's parties.

Nine years and seven hundred parties later, the lists became a method. Forty canapés on the menu, every one engineered to be eaten standing up, in one bite, mid-conversation — because that's how your guests will actually eat them.

  • Canapés engineered for one-bite, standing service
  • Service staff briefed on your guest list
  • Bars stocked and staffed in-house
  • Insured for every major NYC venue

From Our Hosts

Parties, Reviewed

The canapés were the conversation. Our donors stayed an hour past the program, the raw bar never had a line longer than two people, and the staff read the room like they'd worked with us for years.

Press night for our launch — 180 guests, ninety minutes, zero logistics visible. The espresso martini tray at 9 PM was a strategic masterstroke.

We hosted forty people in a Tribeca loft and did absolutely nothing but enjoy it. The team arrived, the party happened, the apartment was spotless by midnight.

Cocktail Party Questions

How many canapés per guest?

For a two-hour cocktail party, plan 8-10 pieces per guest; for a party replacing dinner, 12-14 plus a late-night bite. We portion the waves so the room never feels picked over.

What does cocktail catering cost?

Most parties land between $85 and $175 per guest depending on canapé count, raw bar, bar program, and staffing. Proposals show one per-guest price with everything itemized beneath it.

Do you provide bartenders and service staff?

Always in-house, never subcontracted — one bartender per forty guests and one server per twenty-five as a baseline, adjusted to your venue and program.

Can you work in our apartment or loft?

Constantly. We cook in surprisingly small kitchens, bring everything we need, and leave the space cleaner than we found it — with building management handled in advance.

Do you handle dietary restrictions?

Yes — every wave includes vegetarian, and we build gluten-free, vegan, kosher-style, and allergy-specific canapés into the menu so restricted guests eat as well as everyone else.

How far ahead should we book?

Four to six weeks for most dates; holiday season (late November through New Year's) books two to three months out. Short-notice parties are sometimes possible midweek — ask.
