Vetted Like Employees, Not Gig Workers
Every Sterling & Oak crew member is interviewed in person, background-checked, trained in our service standard, and paid well enough to stay — our average bartender has been with us four years.
That's why we can promise what staffing apps can't: the same professional faces at your events, zero no-shows, and a crew that arrives knowing your floor plan, your timeline, and your name.
- ✓In-person interviews and background checks
- ✓TABC certification and liquor liability insurance
- ✓Uniformed, briefed, and 30 minutes early
- ✓4-year average crew tenure
How Many Staff Does Your Event Need?
The ratios we've refined over 3,200 events — so you're staffed right, not just staffed.
One Bartender per 50 Guests
Keeps the bar line under four minutes. Add a bar-back above 100 guests for restocks and ice runs.
One Server per 25 for Plated
Plated dinners need one server per 25 guests; buffets run lighter at one per 40.
A Captain Above 75 Guests
One person who owns the timeline, the vendors, and the surprises — so you don't have to.
Setup Crew: The Hidden Hero
Two crew for every 100 chairs. The party starts on time because someone lifted early.
Booked in a Day, Staffed for the Night
From quote to crew confirmation in four steps.

Events We've Carried
Two bartenders and four servers for our daughter's wedding — they ran the night like a hotel banquet team. My wife and I actually got to be guests at our own event.
We staff every client event through Sterling & Oak now. Same faces, same standard, zero no-shows in three years. In staffing, that's a unicorn.
Our caterer cancelled staffing two days before the gala. Sterling & Oak fielded a full team of eight in 36 hours and nobody could tell there'd ever been a crisis.
Lock Your Crew Before the Calendar Does
Peak-season Saturdays book two to three weeks out. Send your date and headcount — the staffing plan comes back same day.
Event Staffing, Answered
What does event staffing cost?
Bartenders run $45-55 per hour, servers $38-45, captains $55-65, and chefs $60-75 — four-hour minimums, flat rates, no agency markup games. Your quote lists every crew member and hour before you book.
Are your bartenders certified and insured?
Every bartender is TABC-certified, and we carry general and liquor liability insurance with certificates your venue can have on file the same day you ask.
Do you supply the bar itself?
We bring bar kits, mixers, ice service, and disposables; you supply the alcohol (it's cheaper for you that way). Full bar-package options with glassware rental are available for weddings.
How far in advance should we book?
Two to three weeks for peak Saturdays, less for weekdays. Emergency rescues are our specialty — our fastest full-team fielding was 36 hours before a 300-guest gala.
Can we request the same crew again?
Yes, and most clients do. Book with two weeks' notice and we'll hold your regular crew — same captain, same bartenders, same standard.
What areas do you cover?
All of Dallas-Fort Worth — Uptown to Bishop Arts, Plano to Fort Worth — plus destination events across North Texas with travel quoted flat.
