How It Started

One Fryer and Her Grandmother's Recipe

Orsolya grew up eating churros on Sunday afternoons, made from a recipe her grandmother wrote on the back of an envelope. In 2021 she bought a used truck, fitted one fryer and parked it near the beach on a July weekend.

The recipe has not changed. The dough is mixed every morning, piped straight into the oil when you order, and rolled in cinnamon sugar while it is still too hot to hold.

How a Churro Gets Made

Piped into the oil

The dough goes through a star tip straight into the fryer, so the ridges hold the sugar.

Fried until it crackles

About ninety seconds, until the outside is crisp and the middle is still soft.

Rolled while hot

Straight into a tray of cinnamon sugar, so it sticks.

Coffee at the Morning Window

On market Saturdays we set up a little coffee cart beside the truck: espresso, drip coffee and a churro for breakfast. The fryer goes on at nine.

The afternoon menu starts at noon.

Churro Questions

Where is the truck this weekend?

Thursday and Friday afternoons near the beach, Saturday mornings at the downtown market and the beach after noon, and Sundays in Capitola. If a spot changes, we post it here the night before.

What is in the churros?

Flour, water, butter, eggs, salt and sugar, fried in vegetable oil. The full ingredient list is taped inside the window. One fryer and one counter do everything, so mention any allergy first.

How many guests can you serve at an event?

About 200 orders an hour. For more than 250 guests we add a second fryer.

Can we have churros instead of a wedding cake?

Yes. Many couples do, or serve both. We can bring a small cake-cutting moment of filled churros for the photos.

Do you travel?

Across Santa Cruz County and over the hill to Los Gatos and San Jose for larger events.
