A Season on a Plate in Hudson, NY
A tasting menu that's rewritten every week around nine Hudson Valley farms — observed, cooked, and noted down. Contemporary, seasonal, and never burlap-rustic.

We Cook What the Valley Gives Us
Field Note is a tasting room that starts in the field, not the kitchen. Every week, chef Anna Reyes drives the Hudson Valley — nine farms she's worked with for years — and builds the menu around whatever's actually ready. If the peas peak Tuesday, they're on the plate Wednesday.
It's provenance without the nostalgia: slate plates, clean lines, and a room that feels contemporary rather than country-kitschy. We write down where every ingredient came from, and we'll happily tell you at the table.
- ✓A menu rewritten every single week
- ✓Nine Hudson Valley farms, named on the plate
- ✓Contemporary, never burlap-rustic
- ✓Local, low-intervention wine pairings
How the Menu Gets Written
Four steps, every week, between the soil and your seat.
Walk the Farms
Monday and Tuesday, the chef visits the growers and sees what's actually peaking — not what a supplier list says should be.
Cook the Season
The week's menu is built around that fruit and veg first, then the protein — the plant leads, always.
Pair It Local
Our sommelier matches each course to small Hudson Valley and Finger Lakes growers, mostly low-intervention.
Note It Down
Every course is tagged with its farm and field on the printed menu — provenance you can actually read.
From the Valley, to the Room

Private Dinners & the Chef's Table
The upstairs room seats fourteen for private dinners, and the chef's table looks straight into the kitchen. Tell us the occasion and we'll write a menu around whatever's peaking that week — and pour the wine to match.
We host seasonal supper series, wine-grower dinners, and buyouts of the whole room. Send us the date and the headcount and we'll take it from there.
- ✓Private room seats up to 14
- ✓A chef's table into the kitchen
- ✓Menus written around the week
- ✓Wine-grower dinners and buyouts
The Valley's Favorite Table
The most memorable meal we've had in the Hudson Valley. Every course told you exactly which farm it came from, and you could taste the difference. Quiet, gorgeous, and genuinely moving. Worth the drive from anywhere.
A tasting menu that changes with the week and never feels precious about it. The service is warm, the room is beautiful, and the wine pairings from small local growers were spot on. Book the early seating and stay late.
We did a private dinner for eight and the team built the whole menu around what was ready that week. Nothing burlap-rustic about it — it's contemporary and confident. Our favorite room upstate, full stop.
Before You Reserve
How does the tasting menu work?
It's a five-course seasonal tasting that changes every week around what our farms have ready, with an optional local wine or zero-proof pairing. À la carte is available at the bar if you'd rather graze.
Can you handle dietary restrictions?
Yes — vegetarian is effortless (the menu is vegetable-led anyway), and we accommodate vegan, gluten-free, and allergies with notice. Just tell us when you book and we'll build around it.
Do I need a reservation?
For the tasting, yes — we run two seatings, at 5:30 and 8. The bar takes walk-ups for à la carte when there's room. Book through the form below.
Can you host a private dinner?
The upstairs room seats fourteen and the chef's table looks into the kitchen. We build a custom menu around the week and the occasion — send the details through the form.
Where are you and where do I park?
412 Warren Street in the heart of Hudson, an easy walk from the Amtrak station, with street parking and a lot a block down toward the river.
What should I wear?
Come as you are — it's a relaxed, contemporary room. Most guests land somewhere around smart-casual, but we care far more that you're comfortable than dressed up.
