Two Sisters, a Mesquite Fire, a Masa Obsession
Maíz Fiero started as a Friday-night stand on 4th Avenue — one grill, a cooler of adobada, and Rosa and Lupita Fierro arguing about salsa. Six years later the fire's bigger, the line's longer, and the argument is still going.
We nixtamalize our own corn and grind masa fresh every morning, we grill over real mesquite, and we make five salsas a day from scratch. Nothing here comes from a bag. It's Sonora, on a paper plate, the way our abuela would've wanted it.

How the Tortilla Gets Made

Nixtamalize
Dry field corn simmers overnight in cal, then rests — the old process that gives real masa its flavor and aroma.
Grind Fresh
We stone-grind the nixtamal into masa every morning. No masa harina, no shortcuts, no yesterday's batch.
Press to Order
Tortillas are pressed and toasted the second you order — that's why they arrive hot, soft, and a little charred.
Fire & Fill
Off the mesquite, onto the tortilla, into your hand. Hit the salsa bar and you're done.

Five Salsas. No Rules.
The salsa bar is the whole personality of Maíz Fiero. Five molcajetes, refilled all day: bright salsa verde, smoky tatemada, nutty salsa macha, a habanero that means it, and the roja that started it all.
Take all five. Mix them. Drown your taco. There is no wrong answer here — except skipping the macha.

We're a walk-up counter — no reservations needed, just get in line. For pickup orders, use the form below or call ahead and we'll have it bagged and ready.
Is the masa really made in-house?
Every day. We nixtamalize dry corn overnight and stone-grind fresh masa each morning — no masa harina, no shortcuts. It's the whole reason the tortillas taste the way they do.
What are your vegetarian options?
Plenty — the nopales taco, chile relleno taco, elote, chips and salsa, and any taco built on grilled veg. Just ask and we'll make it work.
How spicy is the salsa bar?
There's a salsa for everyone, from a mild bright verde to a habanero that will get your attention. Everything's labeled — start slow and work your way up.
